Lunch with my bride at Seth’s Lake Fork Creek Steaks & Seafood in Quitman after showing a home on Lake Fork. Seth’s is a throwback to the Louisiana bayou joints you would run across fifty years ago driving the swamps on the way to some good redfish and speckled-trout fishing. The shack is on the highest hill near the bridge (Lake Fork Creek still floods), the uni-sex bathroom is outside, and the interior decorator was partial to license plate displays. What keeps people coming back is the fresh seafood (Seth drives to New Orleans on Tuesday mornings to do his shopping and drives everything back on ice, arriving home in Quitman on Wednesday evening) and the killer steaks. Our waitress took me back to meet the grillmaster, a rangy 20-year-old with red hair and freckles; I congratulated him on my ribeye and told him I’d be back…he beamed. Next time I’ll get my shrimp grilled…he does that…and will hang around to meet Seth. I tried this time but he got hung up on a call from his crawfish supplier who was running late.
